The BEST Italian Style Chili

It was Friday night and we wanted to cozy up with a bowl of chili and a movie, but Hungry Harvest had just delivered a box full of veggies that were begging to be used.

The solution was to create a meat a veggie chili. I didn't just want to add random veggies to my go to chili recipe. So I had a vision of a Italian style meat and veggie chili and decided to go for it.

It was a winner so much so that we have made it twice. The chili is warm and cozy but with the added value of veggies making it a healthy twist on the classic.

This chili can easily be made on the stove, in a crock-pot, or in the insta-pot, but my #1 recommendation is to double this recipe so that there are plenty of leftovers.

Healthy Italian Style Chili

  • 1 small sweet onion, chopped

  • 1/2 a bundle of celery, chopped

  • 1 lb 93% lean ground beef (or turkey)

  • 2 sweet potatoes, peeled and chopped

  • 2 carrots, chopped

  • 1/2 16 oz bag frozen green beans

  • 1 can great northern beans, drained and rinsed

  • 2 cans diced Italian style tomatoes Italian

  • 1/2 tablespoon minced garlic (I use Trader Joe's crushed garlic squares found in the frozen aisle)

  • 1/2 tablespoon oregano

  • 1/2 tablespoon basil

  • 1/4 teaspoon red cayenne pepper

  • 1/2 tablespoon coconut sugar (brown or white sugar would work as well)

  • salt and pepper to taste

*Toppings: crackers, chips, or avocado


Step 1:

Add oil to large pot over medium-high heat. Saute chopped onions, garlic, and celery. Add in ground meat and cook till no longer pink, make sure to break up the meat.

Step 2:

Add in basil, oregano, and cayenne pepper. Stir.

Step 3:

Add in sweet potatoes, carrots, drained and rinsed beans, both cans of tomatoes, and sugar. Stir. Turn heat down to low, cover, and let simmer for about 30-40 minutes until veggies are have softened but are not mushy.

Step 4:

Add in bag of frozen green beans and simmer for about 5 more minutes. Add salt and pepper to taste.

Step 5.

Top with crackers, chips, or avocado. I like Simple Mills crackers and avocado on mine.

To make in the crock-pot:

Add sauteed onions, celery, garlic, and meat to crock pot. Add in spices, beans, tomatoes, carrots, and sweet potatoes. Cook on low for 6-8 hours or high for 4 hours. Add in green beans for the last 30 minutes.

To make in a insta-pot:

Add oil to insta-pot and use saute feature for onions, celery, garlic. Add in ground meat and cook till no longer pink. Add in spices, sweet potatoes, carrots, beans, tomatoes, and sugar then stir everything together. Cook on high for 5 minutes. Quick release then add in frozen green beans and stir. Close and cook on high for 1 minute. Quick release and serve.
