My peach crumble is vegan, paleo, and made with good for you ingredients. This is a dessert that will satisfy your sweet tooth, fill you up, and won't leave you with a sugar hangover.

Paleo Peach Crumble

  • 2-3 ripe peaches

  • 1 tablespoon coconut oil

  • 1/2 cup almond flour

  • 1/4 cup almond butter

  • 1 tablespoon honey, maple syrup, or agave

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 1/2 teaspoon vanilla extract (can omit)

  1. Preheat oven to 350.

  2. Slice peaches (you can peel them or not-your choice)

  3. Melt coconut oil and pour over sliced peaches and mix to coat peaches.

  4. Spray a small baking dish or individual ramekins with cooking spray and spread peach mixture evenly in the baking dish or dishes.

  5. Combine almond flour, almond butter, sweetener of , cinnamon, vanilla, and salt in a small bowl until the mixture becomes crumbly. Add more almond flour if too wet and more almond butter or maple syrup if too dry.

  6. Sprinkle evenly over top of peaches.

  7. Bake for 10 minutes, or until the crumble becomes golden brown.

Just saying if I were you I would pick up some peaches from my local farmers market this weekend and make sure to have some dairy-free vanilla ice cream on hand...
