Is it just me or whenever you want a yellow banana to eat they are all old and spotty, and then whenever you need an old spotty banana for baking they are green?

Bananas don’t last long in my house. Between smoothies, snacks, and banana ice cream we easily go through 2 bunches of bananas a week. I actually had to stop AJ from eating these bananas so I could finally bake a batch of my gluten-free blender banana muffins.

These vegan banana muffins are the easiest healthy muffins to make all you need is a blender and oven. The muffins are vegan, gluten-free, refined sugar-free, and high protein so they are perfect for an on-the-go breakfast, snack, or pre-workout fuel.

Recipe Tips:

  • Muffins are great without toppings but you can top muffins with nuts, blueberries, seeds, or chocolate
  • Some bananas are giant I use two medium bananas for this recipe

Ingredients
  

  • 2 cups rolled oats
  • 4 scoops collagen peptides optional but adds protein
  • 2 tbsp ground flaxseed
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 medium spotty bananas the spottier the better
  • 1/4 cup nut butter
  • 1/4 cup maple syrup
  • 1/2 cup plant-based milk
  • 1 tsp vanilla
  • 1/2 tbsp apple cider vinegar optional but makes them rise more and get fluffier

optional mix ins

  • chopped nuts
  • mini chocolate chips
  • blueberries

Instructions
 

  • Add wet ingredients to a high-speed blender. Blend bananas, nut butter, maple syrup or honey, milk, apple cider vinegar, and vanilla to combine
  • Add oats, collagen peptides, flaxseed, cinnamon, baking soda, baking powder, and salt to a blender and blend to form muffin batter
  • You can hand stir in optional add-ins now or wait and add them to the individual muffin cup at the end. I like to add them to the individual muffin cups at the end so to keep them evenly distributed 
  • Fill greased muffin tins 3/4 full with muffin batter
  • Bake at 350 for 20-22 minutes till muffins are golden brown
  • Let cool then remove from muffin tin
