April is my birthday month, and I love to be the birthday princess. AJ likes to tell me I only get a birthday week, but I claim the month. For my birthday I never was a fan of birthday cake. Growing up I would ask for ice cream, peanut butter pie, or brownies.
However, in college, my friends it became a tradition to make funfetti cakes for holidays or birthdays. We always bought the funfettit cake and frosting because it was fun and festive with all the colors and sprinkles.
Nowadays, I don't want to know what ingredients are found in funfetti cake, but these protein bites are vegan, gluten-free, have no refined sugar, and they taste just like funfetti cake batter. Unlike cake, they are filled with good for you ingredients and no sugar rush.
Best of all, healthy cake batter bites require no baking and are made with 6 real food ingredients. Cake batter bites are high in protein and healthy fats and make a filling snack or treat to satisfy your sweet tooth.
Cake Batter Protein Bites
1/2 cup oats
1/2 cup almond flour
1/2 cup unsweetened coconut flakes
1/4 cup vanilla protein
2 scoops collagen peptides or 2 extra tablespoons of oats or almond flour
1/2 cup cashew butter (can sub almond butter)
1/4 cup honey
pinch of salt
rainbow sprinkles (optional)
Add all ingredients except for sprinkles to a food processor and pulse till smooth.
Roll into balls and set in the freezer for 5 minutes.
Roll protein bites in rainbow sprinkles and then store in the freezer.
No Food Possessor?
Healthy Protein Bites can be in the blender as well. Add oats, almond flour, coconut flakes, and protein to a blender and blend to a fine flour. Add cashew butter and honey to the blender and blend till combined. Another option is to blend dry ingredients into a fine flour. Heat up cashew butter and honey in the microwave or on the stove. Remove from heat and mix in the dry ingredients.
